Bajra Tofu roti (Gluten Free & Vegan)

Looking for something to sparkle your weekend meal at home and make your kids asking for more, must try the recipe for highly nutritious, tasty, gluten free roti that helps in lowering cholesterol level in body – Bajra Tofu Roti.

The Bajra roti is stuffed with a tofu, methi and tomato mixture that makes the chapattis a healthy feast. The fibre in bajra or millet flour binds with the cholesterol and fats and ensures that it is digested well.

Ingredients

2 cups bajra atta / millet flour
2 tea spoon of Himalayan Pink salt (it’s good to avoid market salts, as Himalayan pink salt is natural and very healthy with healing traits) – after all you are trying to bring healthy eating habits at home.

1 cup tofu or vegan cheese.
4 tbsp chopped fenugreek (methi) leaves (dried or fresh)
2 slits of finely chopped green chillies
1/2 cup finely chopped tomatoes

Method 

  1. Knead the dough (with flour, salt and water) well till it’s surface turns smooth.
  2. Then divide the dough into 8 equal portions.
  3.  Scramble the tofu and mix it well with fenugreek leaves, green chilli, tomato and 1-2 tea spoon of salt (as per taste). Divide the stuffing into 4 equal pieces.
  4. Roll out each portion of bajra dough into 6 inch diameter round raw chapattis.
  5.   Place the stuffing on the raw chappati, then place another raw chapatti on top of it and press well so they stick with each other.
  6. Now cook the roti on tawa in slow and medium heat, till the chapattis turn brown on both side.
  7. Bingo your tasty bajra stuffed roti is ready.

You may use light cold pressed oil if you prefer. Though the oil free version tastes yummy too.

Thin Rice Roti (Gluten Free & Vegan)

Thin rice rotis are also called Pathiri, originated in Malabar cuisine and nowadays, it is commonly served in almost all parts of South India. The texture of pathiri is soft and thin that almost everyone including kids finds it hard to ignore. Since rice is a gluten free grain; these are completely gluten free and at the same time these are packed with vitamins, proteins, carbohydrate and fibres.

Ingredients:

  • 2 cups of Rice flour
  • 2 teaspoon of Salt (or as per taste)
  • Little bit of additional dry Rice flour  for dusting while rolling the dough

Instruction

  • Knead the dough (with flour, salt and water) well till it’s surface turns smooth, for soft rotis, knead it with warm water and add one table spoon of salt (or as per your taste)
  • Make medium sized balls out of the kneaded dough.
  • Sprinkle some rice flour on a chakki and make fine thin round piece of raw rati using your bellan/rolling pin
  • Heat a non-stick cooking pan over medium heat and Place the rolled rice flour dough on the PAN to cook until golden brown.
  • Keep flipping the raw roti till both sides of the chapatti are golden brown.
