3 tablespoons Cornflour

500ml of almond or soya milk

1 tablespoons vanilla extract


  1. In a small bowl mix well corn flour in 250ml (half qty) of milk.
  2. Over a Medium-low heat, place a ceramic coated non-stick pan, pour the remaining vegan milk and add sugar.
  3. When the milk begins to boil, add corn flour and milk mixture.
  4. Cook, stirring occasionally until mixture begins to thicken and just reaches a boil, about 5 minutes.
  5. Turn down heat to very low and cook another 5 minutes, stirring occasionally until thick.
  6. Turn off heat and stir in almond butter and vanilla extract.
  7. Pour the pudding into a bowl and let it cool down for 1 to 2 hours
  8. Serve as is or with a topping of sliced fruit.

How To Prepare Gluten Free Yummy Pasta?

Being sensitive to gluten does not mean that you have to stay away from yummy pasta. Here is a recipe to cook gluten free pasta at home by using a pasta machine and highly nutritious vegetables & alternative dairy milk.



  • 3 cups (450 gm) grape tomatoes, halved
  • 300 gm gluten-free rice flour , plus extra for dusting(Use less if you want a higher sauce : pasta ratio)
  • 2 Tablespoon extra-virgin olive oil
  • 2 medium onion, diced.
  • 8 large cloves garlic, minced/grated (1/4 cup or 24 g)
  • Salt and black pepper
  • 2 tablespoon corn flour
  • 21/2 cups unsweetened plain Almond milk or Soya Milk

Note: You need to have a pasta / noodle maker.


  • Prepare the dough with the rice flour and water. Tip out onto a flour-dusted surface and knead for 3 to 5 minutes, or until smooth.

  • Cut the dough into four pieces, then carefully press a portion out flat with your fingertips and start to roll it out using a pasta machine.
  • Start at the widest setting and roll the dough through it, lightly dusting with the rice flour if it sticks. Remember Gluten-free pasta isn’t as elastic as standard pasta, so make sure you avoid using the two narrowest settings, otherwise it may rip.
  • Once you have a thin sheet of pasta (about 2mm thick), set aside on a flour-dusted surface and cover with a damp tea towel to avoid it drying out.
  • Now’s the time gain to use your pasta machine to transform your dough into whichever variety of pasta you like. If you want to make tagliatelle, roll the pasta through the tagliatelle setting on your pasta machine, or use a sharp knife to slice the pasta sheets lengthways into long strips (roughly 7mm thick), placing on a flour-dusted tray as you go.


  • To cook, place in a pan of boiling salted water for around 3 minutes, or until done. When done, drain, cover the Pasta with moist cloth (to avoid sticking together) and set aside.
  • Preheat oven to 400 degrees F (204 C) and then pour some olive oil and once the oil heats, put the halved tomatoes and salt.  Bake the tomatoes for 10-15 minutes.
  • Now it’s time to prepare the sauce. In a large skillet over medium-low heat, add 1 Tbsp (15 ml) olive oil and the garlic and chopped onion. Add a pinch of salt and black pepper and stir frequently, cooking for 3-4 minutes until softened and fragrant.
  • Then stir in 2 tablespoon rice flour (or other thickener of choice) and mix with a whisk. Once combined, slowly whisk in the almond milk a little at a time so clumps don’t form. Add another healthy pinch of salt and black pepper, bring to a simmer and continue cooking for another 4-5 minutes to thicken. Taste and adjust seasonings as needed.
  • Once the sauce turns to your desired thickness add boiled pasta and baked tomatoes and stir.
  • Serve immediately and garnish with extra black pepper and fresh basil.

“How to make  Gluten-free Indian Rotis?”



Bajra Tofu roti (Gluten Free & Vegan)

Looking for something to sparkle your weekend meal at home and make your kids asking for more, must try the recipe for highly nutritious, tasty, gluten free roti that helps in lowering cholesterol level in body – Bajra Tofu Roti.

The Bajra roti is stuffed with a tofu, methi and tomato mixture that makes the chapattis a healthy feast. The fibre in bajra or millet flour binds with the cholesterol and fats and ensures that it is digested well.


2 cups bajra atta / millet flour
2 tea spoon of Himalayan Pink salt (it’s good to avoid market salts, as Himalayan pink salt is natural and very healthy with healing traits) – after all you are trying to bring healthy eating habits at home.

1 cup tofu or vegan cheese.
4 tbsp chopped fenugreek (methi) leaves (dried or fresh)
2 slits of finely chopped green chillies
1/2 cup finely chopped tomatoes


  1. Knead the dough (with flour, salt and water) well till it’s surface turns smooth.
  2. Then divide the dough into 8 equal portions.
  3.  Scramble the tofu and mix it well with fenugreek leaves, green chilli, tomato and 1-2 tea spoon of salt (as per taste). Divide the stuffing into 4 equal pieces.
  4. Roll out each portion of bajra dough into 6 inch diameter round raw chapattis.
  5.   Place the stuffing on the raw chappati, then place another raw chapatti on top of it and press well so they stick with each other.
  6. Now cook the roti on tawa in slow and medium heat, till the chapattis turn brown on both side.
  7. Bingo your tasty bajra stuffed roti is ready.

You may use light cold pressed oil if you prefer. Though the oil free version tastes yummy too.

Thin Rice Roti (Gluten Free & Vegan)

Thin rice rotis are also called Pathiri, originated in Malabar cuisine and nowadays, it is commonly served in almost all parts of South India. The texture of pathiri is soft and thin that almost everyone including kids finds it hard to ignore. Since rice is a gluten free grain; these are completely gluten free and at the same time these are packed with vitamins, proteins, carbohydrate and fibres.



  • 2 cups of Rice flour
  • 2 teaspoon of Salt (or as per taste)
  • Little bit of additional dry Rice flour  for dusting while rolling the dough


  • Knead the dough (with flour, salt and water) well till it’s surface turns smooth, for soft rotis, knead it with warm water and add one table spoon of salt (or as per your taste)
  • Make medium sized balls out of the kneaded dough.
  • Sprinkle some rice flour on a chakki and make fine thin round piece of raw rati using your bellan/rolling pin
  • Heat a non-stick cooking pan over medium heat and Place the rolled rice flour dough on the PAN to cook until golden brown.
  • Keep flipping the raw roti till both sides of the chapatti are golden brown.

How To Make Tasty Vegan & Gluten Free Dinner Rolls?

Here is an easy recipe to prepare soft, tasty, nutritious, vegan and gluten free dinner rolls that will just take 20 minutes preparation time (the yeast does all the work) and it will fill your house with a delicious aroma. Dinner rolls are great bakery item that can mesmerise your guests and can engage your kids to have healthy snacks and want for more.


Prep time: 10 mins | Cooking time: 15-20 mins | Serves 4-6


  • 2 cups Gluten Free flour
  • 7 gms Dry Active Yeast (1 sachet) or fresh yeast
  • 1½   Warm water
  • 2 tbsp Date Paste
  • 1tsp Salt
  • Seeds- Sesame, Flax, Sunflower


Mix 1 tsp date paste & yeast add the mix in a bowl of warm water, and keep aside for 15 mins.

Make a well of flour, add salt, remaining date paste, add the yeast mix and knead. Make a long roll. Cut into equal parts. Take 1 piece, roll into the ball. Now roll on platform to form a long cylinder shape, make a knot and sprinkle some seed mix.

Keep aside for 40 mins. You may make different shaped buns from the dough. Bake in preheated oven at 180 degrees celsius  for 40 min or till brown.
